Seriously good Passionfruit Curd


The passion fruits have been prolific of late, so I made up a couple more bottles of passion fruit cordial, froze some pulp into cubes for later use and decided to have a go at some curd because that's what my Dad used to do when I was a kid.

Turns out that this stuff is seriously delicious.
I've been waiting for my sluggishly laying chickens with their case of the winter blues, to lay me enough eggs to make some more.

Passion fruit Curd

whisk together...

  • 4 eggs

  • 2 egg yolks

  • 3/4 cup raw sugar
add and stir...

  • 3/4 cup passion fruit pulp

  • 125g butter
microwave uncovered on medium for
6-10 mins
whisk every minute
until thick enough to coat the back of a spoon.

Pour into sterilised jars.

Let it shine


Yay!
and just in time for the electricity price rise.

We opted for a local installer and Australian made panels.
We are very grateful to the Sustainable Illawarra project for contributing $3000 towards this to honour a prize we were fortunate enough to win.
Thank you!
Unfortunately the funding on that project has dried up and it has come to a close.  On the up side, Kiama council has decided to take the information gathered by the project and turn it into Kiamasphere - a community information and sharing hub on all things sustainable.

Today, I'm just happy that the sun is shining.
